No refined flours, no refined sugars, no oil or butter, so are these oatmeal and carrot cookies, a healthy snack free of remorse. If to all this we add that they are prepared in the blink of an eye, then this recipe becomes absolute winner.

The oatmeal and carrot cookies have a slightly tender texture, if you want them more crispy just make them thinner and increase the oven time. Carrot has lots of health benefits. Letting them cool on the tray in which they have been baked will also help. They can be enriched with a few pieces of pure chocolate, for an extra touch of flavor.  You can take the delicious dish with green smoothies.

Recipe for oatmeal and carrot cookies



Ingredients: For 10 units

Oat flakes: 85 g
Peeled carrot: 125 g
Ground almonds: 80 g
1 teaspoon ground cinnamon
Chemical yeast 1 teaspoon
Egg: 1
Egg white: 1
Agave syrup: 20 g
Vanilla Essence 1/2 teaspoon (optional)

How to make oatmeal and carrot cookies


Grated the peeled and cleaned carrot with a fine grater. Place it in a bowl together with the rolled oats, ground almonds, ground cinnamon and chemical yeast. We mix well. We add the egg, the agave syrup and the vanilla essence. Mix again until homogenized.

Next we beat the egg white to the point of snow. We incorporate it into the previous mixture little by little and stirring with enveloping movements. We take portions of the dough and place them on a baking tray lined with parchment paper, crushing lightly. Cook in the oven at 200ÂșC, with heat up and down, for 15 minutes. Let cool on a rack before consuming.

Halfway between a biscuit and a biscuit, these oatmeal and carrot cookies are great to accompany with a glass of fresh milk. At breakfast time or snack, even as a mid-morning snack, any time is good to sink your teeth. Especially because, by not carrying sugar or added fats, they are very healthy.
